Sweet Potato Crackers...and a lawn mower

Okay, folks...time to celebrate. I got my new Excalibur 2400 dehydrator!!!! I love it! I've already been using it for about 24 hours straight. First, I made my quiche crust, then my pizza crust, then some sweet potato bread/crackers, and now, my flax seed bread from last week. Can't wait to get the electric bill this month.

The past few weeks have been somewhat stressful, but also refreshing (is that even possible?). I'm starting to dream about what direction I want to eventually head, career-wise. Even though I am passionate about mental health/families/relationships (guess it's a good thing I'm a Marriage and Family Therapist then), I am equally passionate about holistic nutrition. I'm starting to toy with the idea of going back to school or getting some sort of certification in this area. Dunno...just a thought!

Okay, recipe du jour: Sweet Potato Bread/Crackers. I found this recipe on the RawFoodPassion blog. I lathered these babies up with honey and cinnamon this morning...yum!


Sweet Potato Bread Recipe:

2 sweet potatoes
1 cup of flax seeds
1/4 cup of honey
1 tbsp cinnamon
1 dash of sea salt to taste
Directions: Combine all of the ingredients into a food processor/blender and mix until smooth and well combined. Spread the mixture onto a dehydrator tray and set the temperature at 115 degrees. Leave it in the dehydrator for 15 hours.

Oh, and p.s., today is my husband's birthday!!! And, just for fun, here's a picture of the new lawnmower he got this week. Goodbye professional gardener (who destroyed our vegetable garden) and Hello, Mr. Chin (who's pretty much a professional gardener anyway)!

  2. Wow. Way to dehydrate. That is so awesome. I am going to have to try the recipe for the sweet potato bread. Happy Birthday to your hubby. I saw the juices from the previous post. Yes I have made one with too much beets and ouch. My throat didn't love it. Glad you found one that worked.

  3. Yea for the new dehydrator! I have tons of sweet potatoes in my fridge too :) I think ill have to give those crackers a shot!
